My husband was happy to see spaghetti and meatballs on the menu, but apparently they are old hat for my son now… he ate a few bites, just enough to make a mess of his face and hands, and promptly conked out. The recipe was a variation on my basic one, which can be found here along with some notes on the evening’s adjustments.
If you’re in the mood for a different sort of meatball, here are a few other options I’ve made in the past:
*Sardinian pork meatballs, gently simmered
*Pork-ricotta meatballs, slow-roasted
*Lamb kefthedes, fried Greek goodness that can also be served over spaghetti
*Avgolemono chicken meatballs, zingy Greek
*Swedish turkey meatballs, with savory gravy and noodles
