Minty Meltaways

I’ve been having some trouble getting into the Christmas spirit this year. With all of the uncertainties about our son’s developmental delays, baking cookies, decorating the house, and even shopping for presents all seem like afterthoughts. But my aunt came over for a visit a few days ago, so I mustered up a little energy to set the table for Christmas, hang our stockings, and bake some minty cookies. The color of these cookies alone is appropriate for the season, but the mint flavor—which, in my case, came from spearmint I dried this summer—is also quite festive, and ganache is never out of place! (Just for future reference, I used 4 ounces of heavy cream to 6 ounces of semi-sweet chocolate chips for my ganache, and had more than enough for the cookies.)
